Here is one of our weekly menu plans (one of the few we actually stuck to, and that I documented...) might have some good options!!
ReplyDelete- broccoli, cheese, rice casserole
- quinoa veggie mac n cheese (much the same as your cheesy quinoa bake)
- black bean burgers (with some additional change up ideas- sautéed sounds like a great idea... probably gonna start doing that!)
- green monster smoothies
- smashed cauliflower (think mashed potatoes, but with a head of cauliflower)
- red rice & beans (since we're in cajun/creole country now....)

Oooh, thanks muchly! I think the smashed cauliflower and green monster smoothies will have to be side dishes in this house. David requires substance (grains, legumes, etc) for his main dish. =) These sound great though! Thanks so much for sharing.
